So as you all know by now, quick and easy one-dish meals are the name of the game a lot of the time in my house. With busy lives, that’s just sometimes the way to go. (And with no dishwasher, fewer dishes are always appreciated!) So here we have a one dish wonder that combines smoky kielbasa with rice, onions, peppers and a kick of cayenne and chili powder. Vary the spice level to your tastes because HB always insists I make it too spicy no matter how much I back it down. What can I say? I like it hot. The other common trend with the things I make (not so much with my baking but certainly with our meals) is that they tend to be relatively healthy. This dish definitely falls into that category. Use turkey kielbasa and brown rice and you’re good to go! This makes a great, quick weeknight meal and it also makes great leftovers. Quick? Easy? Healthy? One-dish?… it doesn’t get any better than that.

Spicy Southwest Kielbasa
1 lb kielbasa (or other smoked sausage… preferably turkey), cut into bite-size pieces
1/2 c. chopped red bell pepper
1/2 c. chopped green bell pepper
1 small onion, chopped
1 can of corn (don’t drain!)
1 (28 oz) can of whole peeled tomatoes (don’t drain!)
2 c. quick cooking (such as Minute) rice, brown or white
1 Tbsp chili powder
5 dashes of cayenne pepper (just wing it… I never measure this)
1/4 tsp ground cumin
salt and pepper to taste
-In a large, deep skillet lightly brown the kielbasa. Add the onions and peppers and cook just until they’re crisp tender.
-Add the tomatoes and corn to the pan. Break apart the tomatoes with your hands or a potato masher works well also.
-Add all the spices and bring the mixture to a boil.
-Stir in the rice. Return to a boil and cover. Cook 10 minutes for white rice or 15 minutes for brown rice.
